Chocolate Fudge Cake
This chocolate fudge cake is a moist, dense chocolate cake topped with a fudgy pourable icing which is also crowd pleasing and inexpensive to make. Make this fudge cake as dessert for your next potluck party or any get together and it will satisfy any sweet tooth cravings.
(serves 9)
Ingredients
For the cake
120g Unsalted butter
110g granulated white sugar
2 tbsp cocoa powder
1/2 cup water
150g all purpose flour
1 egg (slightly beaten)
1/4 tsp salt
1/2 tsp baking soda
1/4 cup buttermilk (use whipped yoghurt mixed with 1 tbsp water, as replacement)
1/2 tsp vanilla
For the Fudge frosting
85g of usalted butter
2 tbsp cocoa powder
3 tbsp milk
225g icing sugar
1/2 tsp vanilla
Directions
- Line a 20 cm x 20 cm square pan with baking paper in a way you can lift it.
- Add butter, water and cocoa powder to a small saucepan and bring it to a boil over medium heat and set aside. Let it cool for 5 minutes.
- In a large bowl add flour, baking soda and salt. Whisk to combine. Now add the chocolate mixture. Mix well.
- Now add the egg, vanilla and buttermilk. Mix until combine.
- Pour batter into prepared baking pan. Bake for 15-20 minutes or until a toothpick inserted comes out clean. Keep an eye after 15 minutes. Do not over bake.
- Cool the cake for about 5 minutes before pouring the frosting over it.
- Meanwhile prepare the fudge frosting. Combine butter,milk, cocoa powder, vanilla and icing sugar in a medium sized sauce pan and cook over medium/low heat until the butter is melted. (do not keep longer in heat) Once the butter is melted and a glossy shiny frosting is formed, remove from heat and pour over the cake while cake is still warm. If using any nuts, sprinkle them now.
- Allow the frosting to harden. This will take an hour. Then slice and serve. Enjoy!
