Pistachio Ghee Cookies
Pistachio ghee cookies are rich, aromatic shortbread-style cookies are slightly crumbly, these cookies have a melt-in-the-mouth texture due to the ghee, which gives them a uniquely soft, buttery bite. The surface is often gently cracked, dotted with bits of finely chopped pistachios, and may carry the subtle shimmer of a pistachio pressed on top.
When you take a bite, the flavour is deeply aromatic ghee provides a warm, nutty richness that lingers, while pistachios paste add a delicate flavour and a distinct, slightly sweet nuttiness.
They’re not overly sweet, making them perfect for pairing with tea, coffee, or as part of a festive dessert platter.
Ingredients
150g all purpose flour
1/2 cup softened ghee (75g)*
3 tbsp pistachios paste (store bought)
180g icing sugar/ confectioner's sugar
1/2 tsp vanilla extract
1/4 tsp baking powder
1/4 tsp cardamom powder (optional)
Directions
- Sift flour, baking powder and cardamom powder together. Keep it aside.
- In a bowl, mix ghee, pistachio paste with icing sugar. (you can use an electric beater or use your hands.)
- Add the flour mixture in small quantities and mix well. Knead it until you get a soft dough. (This dough should not be very sticky.)
- Meanwhile preheat the oven to 150 degrees Celsius for 10 minutes.
- Make small balls out of the dough. (this doubles in size, make sure you make small balls)
- Place the balls in a tray lined with parchment paper. Press in a whole pistachio, plums or any dried fruit in the centre.
- Bake the cookies for 15 minutes.
- Once baked, let it cool in the tray for 10-15 minutes before you remove. Enjoy!
